Save the extra cordial you can use for brunch beverages, sweets, or to mix more rounds of this cocktail.

The Bikini Cocktail

Makes enough for 10 guests

To make the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

For the Cocktail (yields 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing

Method

For the Citrus Syrup: Put the listed components in a saucepan, bring to a light boil, agitating to dissolve. Then, remove from the stove and let it to cool completely. Pour to a sterilised bottle, close it and store in the refrigerator, where it will keep for around four weeks.

For the Cocktail Base: Pour the specified liquid ingredients into a big jug, let it rest for an hour, then pass it through preferably using muslin, so it's fully clarified.

For serving: Pour 85ml from the batch mix into your cocktail shaker filled with ice, and stir gently for about 60 seconds to cool it down. Filter into a cold coupe glass or equivalent, garnish with a few cranberries adding the final touch using a light spray with the mandarin essence above the glass.
